With the way the CSM is acting as the lander it’s actually quite similar to Nova rocket which was designed for a direct ascent moon mission (whole craft lands and takes off) and was effectively a larger Saturn V with a CSM based lander stage Also as mentioned by others the spire on the top was actually the launch escape system which contained solid rocket motors designed to yeet the command module away from the rocket in case of a failure. It was jettisoned in flight to save weight once outside the atmosphere

For stage separation: The mod ControlCraft has the block "Spatial anchor", which does exactly what you need.

Kerosene is actually exactly what the saturn 5 used! The first stage of the rocket used kerosene and liquid oxygen, while stages 2 and 3 used hydrogen instead.
