Those are still Torx screws, they're called "External Torx" or "Inverted Torx", or vendor-neutrally "Hexalobular External" (as opposed to "Hexalobular Internal" for the regular ones). The tool sizes for the external ones start with E instead of T.

Bit of a tip for disassembling automotive bits like this - instead of prying at the split line to separate the motor from the gearbox, find a flat face on one of the parts facing the right direction and hit that with a rubber mallet

@14:51 As an AE I wanna you that Hellical Gears Are used in Power Transmission because it Provides more face width due to their diagonal shape,Which enables them to handle greater loads as compared to a Spur gear of the same size....And their shape also enables more teeth to stay in contact with each other at a time..making them ideal for the Planetary Gearbox setup of Automatic transmission just like this one you dismantled..

Both ST and TI offer developer boards that will do sensorless motor drive using field orientated control. The boards will also profile the motor where they spin the thing and measure all of it's parameters. As far as I know they offer these in low voltage (60V limit) and high voltage (mains) variants. I don't think they are that outrageously expensive so they might be a decent option. Another option would be a higher voltage hobby remote control motor esc board. I'm not sure how high these go up to through.

Supplying a phase of motor winding with DC like he did is also used in DC Injection Braking. The motivation for injecting DC into one winding can be seen when he struggles to rotate the rotor after powering with DC. The permanent magnet poles and the winding poles align and are reluctant to un-align.
