There is another reason why they are white. Notice how the backgrounds are fairly dark in HK and Ori. It's to create contrast. The higher the contrast the easier it is to keep track of and the player character is usually the most important thing to see. If Omori would use the same colour scheme as his friends he would much easier blend into the background. His pitch black hair and pure white face makes sure he always has contrast to the background.

I love how you said color tells emotion, in the case of rainworld lighter color characters (monk and saint) symbolize weaker, kinder characters in my eyes and darker and red characters symbolize aggression (hunter, artificer) i never thought about it that way and it really is crazy how the colors of characters convey so much emotion

Little white guys are kind of like the silent protagonist trope extended into the visual design of the character itself.

They also contrast well with the background. You'll never have any problem telling where your character is.
another thing is that these characters tend to have simplistic name that might not even get mentioned in the story much. like "the Knight" "slugcat" even ori is a small two syllable name
